Why Cretan Olive Oil Is Different From Every Other

The olive trees on the hillside above Vamos are not beautiful in any conventional sense. They are gnarled, low, wide — their trunks twisted by centuries into shapes that suggest some ancient argument with the wind. The oldest ones here are over a thousand years old. The Stavrakakis family harvests them every November, by hand, on nets spread on the ground.
